Ruby’s City Restaurant in downtown Ashby, MN, serves delicious home-style cooking for breakfast, lunch and dinner. There are evening specials Thursday through Saturday. Ruby’s is open Monday and Tuesday from 6:00 a.m. to 3:00 p.m.; Wednesday, Thursday, Friday and Saturday from 6:00 a.m. to 8:00 p.m.; and Sunday from 6:00 a.m. to 2:00 p.m. Owner Gail Johnson makes all her own pastries, cookies, cakes and bars. She caters pastries for special occasions. Ruby’s also features specialty dinners in season such as pheasant, lutefisk and lefse. Ruby’s prices are very reasonable and the portions are generous.
