I just had an eggplant parm sub from On A Roll in Highland and it was the worst eggplant parm sub I have ever had. The sauce tasted like they poured the tomatoes right out of the can...very acidy. I could barely taste any eggplant. They must slice the eggplant on the meat slicer, because it is paper thin. And there is too much soggy breading, loaded with oil. The mozzarella cheese tasted like it was a little sour, maybe just starting to turn bad. And lastly, the bread was the best part of the sandwhich. I would never, ever order an eggplant parm
