Aside from the fact that Shin makes some of the best sushi I've ever had, it's amazing to see how well Shin remembers what dish a customer liked the last time they were there. It's a small place tucked away in a strip center in Mission Viejo, so if you're not familiar with it it's easy to miss. But do check it out! I love the rainbow roll, the tempura shrimp hand roll, spicy tuna roll, and eel roll. Service is great, and Shin, while a quiet guy, makes all of his customers feel as if it's an honor to prepare food for them.
