Chalupas (Cha-lu-paz) - Flat tortillas with refried beans sprinkled with cheese topped with guacamole salad. Chile Relenos - Ball of ground beef and shredded white cheese surrounding a piece of bell pepper Chimi Changa - Beef tips wrapped in a flour tortilla soft or deep fried topped with melted white cheese. Enchiladas - (En-chie-lah-dahs) - Tortillas rolled around seasoned fillings topped with sauce and cheese. Mexican Chile Relleno - Poblano peppers stuffed with cheese dipped in beaten eggs fried. Nachos - Crispy corn tortillas baked with creamy white shredded cheese melted on top. Quesadilla - Flour tortilla folded and stuffed with white cheese and grilled. Great for Los Ninos.
