I moved to Medford many years ago and of course the first thing I did was to investigate the local pizza shops. My second time out I went to a place called 'Joe Pizza' (go figure). And to my delight I realized, I had struck GOLD, This neighborhood pizza place was making the best I had ever tasted. and let me tell you I am PICKY. The crust is edible to the last bite, not like others which vary from cardboard to just an excuse. I asked 'Joe' how he made the crust only to be told that the dough was 'aged'. Of course he's not talking. B
