Eno Terra is located 50 miles from New York City and 45 miles from Philadelphia. The area between these two major metropolitan centers covers almost 7800 square miles, more than enough farmland to sustain the local sourcing of produce, meat and fish for Eno Terra. Eat local defines our cuisine and remind us of the source of our raw ingredients. By cultivating these sources, Eno Terra supports many local businesses and by hiring local workers, it supports local economies.  But most importantly it will provide the real satisfaction of fresh and flavorful food. When the product has to travel no further than the typical commute to New York or Philadelphia, in addition to ensuring freshness, we will minimize our impact on the environment. Many vegetables have to be genetically altered to prosper or withstand prevailing conditions in their non-native growing locations across America. Besides providing enhanced flavors, an unheralded benefit to using local farming and sourcing is that we can specify that our supplies provide heirloom varieties that are often not as easy to grow as more commercial produce, and typically don’t “do as well” outside of their local environment. This means that a carrot at Eno Terra will taste like a carrot and a tomato will have the unmistakable Jersey flavor. By requesting heirloom varieties and using minimal processing, we find a higher nutritional value as well. Eat local, it’s just good for ya’.
