Ivan and Karen Coleman started canning peppers on their farm in Decatur, IL. usually using banana peppers. After moving to Cape Coral, Fl. they had access to many kinds of peppers. After Ivan's death at Christmas 2008, Karen decided to market their peppers to be able to share them with everyone. Karen now cans 9 to 11 different kinds of peppers in the Hot Pepper recipe.It depends on what peppers are in season.
