Ruby’s City Restaurant in downtown Ashby, MN, serves delicious home-style cooking for breakfast, lunch and dinner. There are evening specials Thursday through Saturday. Ruby’s is open Monday and Tuesday from 6:00 a.m. to 3:00 p.m.; Wednesday, Thursday, Friday and Saturday from 6:00 a.m. to 8:00 p.m.; and Sunday from 6:00 a.m. to 2:00 p.m. Owner Gail Johnson makes all her own pastries, cookies, cakes and bars.
